Quick Pickled Cucumbers and Onions takes slices of cucumbers and onions, and wraps them in a light and refreshing dressing. It makes for a crunchy and slightly sweet salad, that's perfect for the hot days of summer.


I first learned of this tasty dish back in the early 80's, when my sister-in-law brought it to a cookout we were having. I was hooked after just one bite, and couldn't believe how easy it was to make, when I asked her for the recipe.

Stir-fries are perfect for quick weeknight meals. They're easy to make, take less than 30 minutes from start to finish, and make great use of fresh vegetables. But what really sets this stir-fry apart from the others, is that it's loaded with protein, without any meat at all.

How is that possible? Because I've added two of my favorite vegan protein sources, chickpeas, and quinoa noodles.

One of my mom's favorite frugal meals to make when I was a child, was hot dogs and sauerkraut. While it definitely wasn't anything fancy, it was a filling and tasty meal, when served with fried potatoes and cornbread.

I've since tweaked my mom's recipe, and now make it with smoked sausage instead of hot dogs, and have added the potatoes to the dish itself, instead of on the side. I'm all for cutting out a step if possible, to make meal prep easier.

Believe it or not, I have never eaten gazpacho before I made this recipe. Now I can't believe how much time I wasted, not making it sooner. When I was growing up soup was always served hot. I took that culinary training into my adulthood, and never thought to challenge it, until now.
