The Pioneer Woman is one of my favorite cooks out there. Our cooking styles are so similar that it's almost scary. She whips up down-home country cooking, that sticks to your ribs. Comfort food at it's best.
My family and I used to treat ourselves to chicken tenders once in awhile when we ate out, but not any more. Not since I learned how to make them at home! When I found P-Dubs recipe for homemade chicken strips I was all over it. And she didn't disappoint either. They came out crispy on the outside, moist and tender on the inside, and absolutely delicious.
P-Dub Homemade Chicken Strips
1 package chicken breasts, cut into strips (Sometimes called 'tenders' or 'strips')
Buttermilk for soaking the chicken
1 1/2 cups self-rising flour
2 teaspoons Lawry's seasoning salt
1/4 cup buttermilk
Pure olive oil for frying
Rinse and dry chicken strips, then place them in a bowl with buttermilk (enough to cover them) and allow them to soak for 15 to 20 minutes.
In another bowl combine the flour and seasoning salt, stirring them together well.
Drizzle the 1/4 cup of buttermilk into the flour mixture, stirring lightly with a fork as you add it.
Heat about 1 inch of oil in a large skillet over medium heat.
Place a few of the buttermilk-soaked chicken strips in the flour mixture, turning them over to coat them thoroughly.
Place them on a plate and continue with the rest of the chicken strips until they are all coated.
When the oil is hot, begin cooking the coated chicken strips a few at a time, until they are golden and crispy. This should only take a couple of minutes per side.
Remove them to a paper towel-lined plate, and continue with the rest of the chicken strips.
Serve with your favorite dipping sauces. BBQ and honey mustard are good choices.
