BLT Salad

We're all familiar with the famous BLT Sandwich. Bacon, lettuce and tomato sandwiched between 2 slices of bread, that have been smeared with a bit of mayonnaise. Then eaten as is, or grilled on both sides before being served. Although the ingredients of the BLT have existed for many years, there is little evidence of BLT sandwich recipes prior to 1900. Looking back, one of the earliest mentions of the sandwich was in the 1903 Good Housekeeping Everyday Cook Book, where a club sandwich included bacon, lettuce, tomato, mayonnaise and a slice of turkey. But what about those classic flavors in a salad?


Necessity is the mother of all inventions, and since I am gluten intolerant, I came up with a super easy way of enjoying a BLT. Just leave out the bread and mayo and eat it as a salad! This delicious salad has all the flavors of the sandwich, but without the gluten and carbs. It only contains five simple ingredients, and is perfect for lunch, or a light supper.


This salad closely resembles an old-fashioned recipe called wilted salad, where leaf lettuce, green onion and bacon are mixed together, and drizzled with hot bacon grease, causing the lettuce to wilt slightly from the hot grease. This version adds tomatoes, and uses slightly cooled bacon grease, so the lettuce doesn't wilt.

BLT Salad

Ingredients

2 slices bacon
1 - 2 cups leaf lettuce, torn into large pieces
1 small tomato, chopped
1 small green onion, chopped
Sea salt to taste

Directions

Cook bacon in a skillet over medium heat until crisp. Set bacon aside to drain on paper towels, reserving the bacon grease in the pan. Once the bacon is cool enough to handle, crumble into pieces and set aside.
In a salad bowl, place the lettuce, tomato, onion, and bacon pieces.
Drizzle a tablespoon or two of the reserved bacon grease over the salad, along with salt to taste, and toss to coat. Serve immediately.

Notes: *Be careful with the salt, as the bacon is already salty.

*I use leaf lettuce in this recipe, but any type of lettuce may be substituted.

*You can use olive oil in place of the bacon grease if you prefer, but the recipe is absolutely perfect the way it is, so I strongly recommend the bacon grease.
