Grilled Corn with Fresh Garlic Butter and Lime

Grilled Corn is the perfect summer side dish, and when topped with Fresh Garlic Butter and a squeeze of Lime, it will become your favorite side for all your cookouts.


Corn on the cob is my all-time favorite summer side dish. Up until a year ago though, I had never had it grilled. Say whhaaatt?! Yep, for someone who loves corn on the cob so much, it's hard to believe. My mom and dad never got into the grilling thing for some reason, so the only time I got to enjoy cookouts, was when we went to one hosted by family or friends.

Unfortunately everyone thought that the meat was the main attraction, and was the only thing cooked on the grill, while the guests brought the sides and desserts, for a good old-fashioned potluck. I finally broke the tradition last year though, and cooked it on the grill and wowzers, was it a game changer! The sweetness of the corn, mingled with the smokiness from the grill, makes for an amazing flavor combination that's hard to resist.



This recipe is super easy to make. You start by mixing the garlic butter ingredients together, then set aside to allow the flavors to mingle. Pull the husks back on the corn and remove the silk, rinsing under cold water to help remove any stray strands. Pull the husks back up around the corn, then soak in a sink full of cold water for 10 minutes. Remove from the water, shake off any excess, and place on the upper shelf of your grill, that is set on medium, and close the lid.

Cook for 20 minutes, turning over halfway through the cooking time. (If you don't have an upper shelf, be sure to turn the corn frequently to prevent burning). Pull the husks back and slather with garlic butter, sprinkle with Parmesan cheese, (I used freshly grated, but I think this is one of those times, when the powdered kind in a jar would work best). and add a squeeze of lime. Then get ready for some amazing corn on the cob! Corn that's slightly sweet and smoky, garlicky, and with the freshness of lime, equals a delicious side dish everyone will love.


Grilled Corn with Garlic Butter and Lime

Ingredients

For the Garlic Butter
1/2 stick (4 tablespoons) salted butter, softened
2 cloves garlic, minced
1 teaspoon slightly dried chives (I used Gourmet Garden brand)
Sea salt and fresh ground black pepper to taste

For the Corn
4 ears corn
1 lime, cut into wedges
Parmesan cheese

Directions

Place all of the garlic butter ingredients into a small bowl, and stir to combine. Set aside.
Prep corn by peeling back the husks and removing the silk. (Leave the husks attached to the corn)
Place the husks back around the corn and soak in a sink filled with cold water for 10 minutes. Remove corn from water and gently shake off excess.
Place corn on the upper shelf of your grill that is set to medium heat, and cook for 10 minutes with the lid closed. Flip corn over and grill 10 minutes more, or until corn is done.
Pull back the husks (you can remove them if you'd like) and brush with garlic butter.
Squeeze lime juice over them, then sprinkle with Parmesan cheese.
Serve immediately.
