Dilly Potato Salad

Dilly Potato Salad coats red potatoes with a tangy mixture of Greek yogurt, Dijon mustard, and seasonings, for a light and refreshing change from your regular potato salad recipe. It's healthier too!


Here is the third and final recipe I promised you, from the #CookoutWeek event I participated in last week. As I mentioned in Monday's post, I originally had six recipes planned, but unfortunately became ill, and was only able to post three. The recipes were to good not to share though.



My potato salad recipe I normally make is a winner, but I can no longer enjoy it due to an egg allergy, so I came up with this tasty version instead. The mayonnaise is replaced with healthy Greek yogurt, and flavored with a special seasoning, Swine Dining Dilly Dust, for a healthier and lighter potato salad, you can feel good about serving your family and guests.

Greek yogurt is my go-to mayo replacement. Not only is it egg-free, but it's loaded with protein, and is full of healthy probiotics. The fresh parsley adds a fantastic freshness to the potato salad, and leaving the skin on the potatoes gives it a beautiful splash of color. The skin of red potatoes is actually good for you too! They're loaded with fiber, B vitamins, iron and potassium.

Dilly Potato Salad


Ingredients

6 cups cubed red potatoes, scrubbed clean
1 cup Greek yogurt
1 tablespoon Dijon mustard
2 tablespoons dill pickle relish
1 tablespoon apple cider vinegar (I use Bragg's)
1 tablespoon chopped fresh parsley
1/2 tablespoon Swine Dining Dilly Dust
1/2 teaspoon salt, or to taste
Fresh ground black pepper to taste
2 green onions, chopped
1 stalk celery, diced

Directions

Bring a large pot of salted water to a boil.
Add potatoes and bring back to a boil, then cook until tender but still firm, 8 - 10 minutes. Drain and run under cold water to cool.
In a medium bowl combine Greek yogurt, Dijon mustard, dill pickle relish, vinegar, parsley, Dilly Dust, salt and pepper.
Place cooled potatoes, green onions and celery in a large bowl.
Pour dressing over potato mixture and stir gently to combine.
Chill at least 1 hour before serving, to allow the flavors to mingle.

Serves 6 - 8

Cooks note: Don't skip the step of chilling the potato salad. This gives the seasonings a chance to enhance the dressing, and develop it's full flavor. In fact, the flavors become even better the next day, so this is a perfect make-ahead dish for a cookout or BBQ.
