Smoked Sausage with Potatoes and Sauerkraut

Smoked Sausage with Potatoes and Sauerkraut is an old-fashioned southern meal, that is sure to please. Add cornbread on the side, for a complete meal.

One of my mom's favorite frugal meals to make when I was a child, was hot dogs and sauerkraut. While it definitely wasn't anything fancy, it was a filling and tasty meal, when served with fried potatoes and cornbread.

I've since tweaked my mom's recipe, and now make it with smoked sausage instead of hot dogs, and have added the potatoes to the dish itself, instead of on the side. I'm all for cutting out a step if possible, to make meal prep easier.

Cubed potatoes are fried in a little oil, along with chopped onion, then the smoked sausage, sauerkraut, salt and pepper are added, and cooked for a few minutes until heated through. Easy huh? This recipe takes less than 30 minutes to make, and is perfect as a quick and easy weeknight meal.

I still serve this filling and comforting dish with cornbread like my mom did, and think of her as I prepare it for my family.

    3 medium potatoes, peeled and cubed
    2 tablespoons pure olive oil
    1 small onion, chopped
    1 pound beef smoked sausage, cut into coins (polish sausage may be substituted)
    1 - 32 ounce jar old-fashioned sauerkraut, rinsed and well drained
    Salt and fresh ground black pepper, to taste


    In a large skillet heat the oil over medium heat. Add the potatoes and season lightly with salt and pepper. Saute for 10 minutes, or until lightly browned, stirring occasionally.
    Stir in onion and saute for 5 minutes, or until tender and translucent.
    Add the sausage, sauerkraut, salt, and pepper to taste, and cook, covered, over medium heat for 7 - 9 minutes, or until heated through and potatoes are tender, stirring occasionally.
    Taste for seasonings and serve, along with cornbread for a complete meal.

    Yield: 4 - 6 servings.

    2. I do love sauerkraut... but I hate how much house smells after cooking it! My favorite is mixed into mash potatoes with roast pork. YUM!
