I began an internet search one day looking for an easy Peanut Brittle recipe to make, that didn't require the use of corn syrup. After quite a bit of searching I finally found one. I thought it surely wouldn't work, but decided to give it a try with a small batch. Rich, crunchy peanut brittle was the result. If your a peanut brittle fan, this recipe is a definite must try.
EASY Peanut Brittle
Ingredients
2 1/2 cups roasted peanuts
2 cups sugar
1 1/2 cups water
1/2 teaspoon salt (Omit if your using salted peanuts)
2 tablespoons butter
1 teaspoon vanilla
1/4 teaspoon baking soda
Directions
In a saucepan over medium-high heat combine sugar, water and salt. Clip your candy thermometer onto the pot.
Stirring occasionally, heat the mixture until it reaches 300 degrees F. This can take anywhere from 10 to 20 minutes, depending on the heat of your stove. It should have a golden amber color.
Working quickly, and stirring continuously, add butter, vanilla and baking soda. The mixture will foam. Continue stirring quickly until the foaming subsides and the mixture starts to get glossy.
Quickly stir in the nuts and turn out onto a silicon baking mat or very well greased baking sheet.
Flatten the mixture to your desired thickness and allow to cool for about 20 minutes.
Break into pieces and enjoy.
Store in an air-tight container for up to 1 week.
NOTES: *Make sure to have all of the ingredients and equipment ready before beginning the recipe.
Use a heavy bottomed saucepan.
*Once the sugar mixture reaches 300 degrees you need to act quickly in adding the other ingredients, moving it to the baking sheet, and spreading it out. It gets firm very quickly, and you may have to use a little muscle, but it can be mashed down to your liking.
