This main dish soup is a hearty mix of cheese, smoked sausage and potatoes. It's rich and creamy texture goes great with homemade rolls, and is a warm and satisfying meal on a cold winter night.
Hearty Sausage and Potato Soup
1 lb Smoked Sausage (Cut in 1/4 inch slices)
8 medium Potatoes, (peeled and cut in large chunks)
1 small Onion, chopped
2 tablespoons Butter
4 cups chicken broth
1 lb Shredded, Colby-Jack Cheese
1 Can Evaporated Milk
2 Tbs flour mixed with 3 Tbs water. Stir till smooth
1/2 tsp. garlic powder
1 tsp. salt
1/8 tsp. pepper
Melt butter in a large pot over medium/high heat. Add onion and cook till onion is translucent.
Add potatoes and chicken broth. Add salt, pepper, and garlic powder. Bring to a boil, then continue cooking over med./high heat for 15 minutes. Potatoes should just be starting to fall apart. Add smoked sausage and cook for 5 minutes more. Add evaporated milk and flour-water mixture and cook for another 2 minutes, stirring continually. Add cheese and cook till cheese is melted, stirring occasionally. (About 3 minutes) Taste and adjust seasonings if needed. Serve with warm dinner rolls.
This makes a large pot, so cut the recipe in half if you would like a smaller amount.
