When the temperature is high, and the thought of heating up your kitchen to cook makes you start sweating, then pull out the grill and make this easy and delicious dish along side your burgers and brats. While these potatoes are traditionally a camping menu item, I found out they are equally tasty prepared on the grill. My favorite part, cleanup is a breeze with the potatoes being wrapped in foil. In fact, when we're actually camping, I cook 90% of the food that way. It's neater, and keeps dirty pots and pans to a minimum.
They are super easy to make. Just layer thinly sliced potatoes and onions on a piece of foil, drizzle with butter or oil, sprinkle with bacon or ham, and salt and pepper. Wrap up tightly and place on a grill or on the outside edge of a campfire. Cook for 45 minutes to an hour, turning every 10 minutes or so and voila, you have a delicious side dish to serve with your meal. With NO pan to clean!
4 medium potatoes, scrubbed clean and thinly sliced (a mandolin slicer works great for this)
1 medium onion, thinly sliced
2 tablespoons butter, melted (olive oil may be used as well)
3-4 pieces chopped bacon or ham (optional)
Sea salt and fresh ground black pepper, to taste
Preheat an outdoor grill for medium-high heat.
On a piece of heavy duty foil, about 20 x 20 inches, layer the potatoes and onion and pour the melted butter over them. Toss to coat gently, then sprinkle with chopped bacon or ham and salt and pepper to taste.
Fold edges of foil together and seal tightly.
Place on the prepared grill over indirect heat, and cook 45-50 minutes, turning over several times until potatoes are tender.
