Who would have thought that a main dish that has so few ingredients, would be so filling and have so much flavor? I'm always looking for different dishes that use other meats besides beef or chicken. So when I stumbled across this recipe, I was super excited. I tweaked it to suit my families tastes and came up with a winner. Just five simple ingredients, plus seasonings and you have a tasty and satisfying meal.
Cheesy Potatoes and Smoked Sausage
Ingredients
4 medium-large potatoes, chopped into 1 inch cubes (Peeled or unpeeled, your choice)
1 small onion, peeled and diced
1 package of smoked sausage, cut into pieces (the package with 2 pieces in it)
1/2 cup butter (1 stick)
2 cups shredded colby/jack Cheese
Sea salt, fresh ground pepper, and garlic powder to taste
Directions
Pre-heat oven to 400 degrees F.
Place 2 tablespoons of the butter into a 9X13 pan. Place pan in the oven until butter is melted.
Add the potatoes to the pan, along with onion, salt, pepper and garlic powder. Cube the remaining butter on top of the potatoes, cover with foil, and bake for 30 minutes.
Remove from oven and add the smoked sausage. Stir to coat the smoked sausage with butter. Replace foil and bake for another 30 minutes, or until potatoes are tender.
Sprinkle cheese over the potatoes and smoked sausage, and bake for another 5 minutes, without the foil, to melt the cheese.
Stir gently to combine and serve.
