Cinnamon Bun Mug Cake

Whoever thought up the idea of cake in a mug is genius, It's ridiculously easy and delicious. You mix all of the ingredients, microwave and eat it, all in the same mug. It's perfect for those mornings when you're in the mood for a sweet treat with your coffee, but not the long process of baking a batch of cinnamon buns. While this is more of a cake then a bun, the flavor is the same, and has the added benefit of being grain free. That's right, grain free!

A rich, delicious cinnamon bun cake, that cooks up in just 2 minutes. Perfect with your morning coffee.

Cinnamon Bun in a Mug


2 tablespoons coconut flour
1/2 teaspoon cinnamon
Dash salt
1/2 teaspoon baking powder
1 egg white
3 tablespoons milk
2 tablespoons honey or maple syrup {Depending on which flavor cake you would prefer}
1/2 teaspoon vanilla

2 tablespoons powdered sugar
1 teaspoon milk {A few more drops of milk may be needed}


Mix all of the cake ingredients in a small bowl, stirring well to combine.
Pour batter, it will be thick, into a coffee mug that has been greased with a little butter.
Allow batter to stand for 5 minutes, then microwave on high for 2 minutes.
Mix the icing ingredients in a small bowl, drizzle over the hot cake.
Serve immediately.

Notes: For a really decadent icing, blend 1 tablespoon of softened cream cheese, with a drizzle of honey or maple syrup. Spread over cake and eat.
