Spinach and Arugula Salad with Pineapple Dressing

With our Springtime temps getting warmer and warmer, it was time to pull out the salads. Not just any salad will do though, I get bored with them pretty quickly, and need to change up the colors and flavors to keep my interest peaked. While shopping recently, I seen some beautiful pineapples on sale, the first of the year, and my mind immediately jumped to how tasty they would be on a spinach salad. So I grabbed the pineapple and as I was checking out the spinach, I noticed a spinach and arugula salad mix and thought the peppery taste of the arugula would be a great match for the sweetness of the pineapple. Thus, the Spinach and Arugula Salad with Pineapple Dressing was born.


While it may seem like you fussed over this salad, it's super easy to throw together. The bright, fresh taste from the pineapple dressing finishes it off perfectly, and adds just a hint of sweetness to the salad. That, combined with the slight tang of the vinegar wakes up your taste buds and makes for an exciting salad.


Making the salad is easy! All it takes is a quick whirl in a blender for the salad dressing, adding all of the salad ingredients into a bowl, and tossing lightly with the dressing. That's it! Perfect for those hot Summer days, when even the thought of cooking makes you start sweating.

Spinach and Arugula Salad with Pineapple Dressing

Ingredients

Dressing:
1 cup fresh pineapple, diced
1 green onion, diced
3 tablespoons apple cidar vinegar
Sea salt and fresh ground black pepper, to taste (Leave out the pepper for AIP)
1/2 cup Olive Oil

Salad:
1/2 to 1 cup each fresh spinach and arugula (Or, just buy the prepackaged spinach and arugula salad mix)
1 green onion, chopped
1 cup fresh pineapple, diced
1/2 avocado, diced
2 slices bacon, cooked and crumbled

Directions

In blender, mix together: pineapple, onion, vinegar, salt and pepper. Blend this together for about 15 seconds, then with blender still running, slowly pour in olive oil until dressing is completely blended and smooth.
In a salad bowl, add: spinach, arugula, onion, pineapple, avocado, and crumbled bacon. Toss with enough pineapple dressing to coat greens lightly. Serve immediately.

Serves 4, or if you're like me and make this your main course, it will serve 2.
