No-Bake Pumpkin Cheesecake

Today I, along with 25 other bloggers are helping Camilla of Culinary Adventures with Camilla celebrate her 15th wedding anniversary! Originally we were going to keep the number of participating bloggers at 15, to match the number of years Camilla has been married. After some discussions about it though, we decided "Why stop at 15?" Especially when we found out just how many cheesecake fans there are out there.


At first I was going to make an allergy friendly type of cheesecake. But when my family found out I was making cheesecake, they literally begged me to make the real deal. Now while I have some food allergies and food intolerance's, I have to admit that there is nothing quite like a smooth, creamy cheesecake made with real cream cheese. So I decided to follow my families advice and make them an honest-to-goodness real cheesecake.



And while I was only able to enjoy a small sliver of the cheesecake, it was ah-maz-ing! Cheesecake is one of my absolute favorite desserts. Add to that another dessert favorite, pumpkin, and I was in love. My family feels the same way it seems, because they devoured it, and not a crumb was left by the end of the day. What with it being a no-bake version, you can bet I will be making this easy pie for my family again through the summer months. What a great way to beat the heat. :)

No-Bake Pumpkin Cheesecake


Ingredients

1 - 8 oz. package cream cheese, softened
1 cup canned pumpkin puree
1/2 cup sugar
1/2 teaspoon pumpkin pie spice
1 - 8 ounce container cool-whip
1 graham cracker crumb crust, homemade or store-bought

Directions

Place cream cheese, pumpkin, sugar and pumpkin pie spice in a electric stand mixer and mix on medium speed until well blended. Scraping the bowl down as needed.
Gently fold in the whipped cream and spoon into the prepared graham cracker crust, smoothing the top down with a spatula.
Cover the cheesecake with plastic wrap and refrigerator at least 3 hours or overnight.
Serve topped with whipped cream if desired.
Store leftovers in the refrigerator for up to 3 days, if it last that long!
