Baked apples, many of us have fond memories of enjoying this old-fashioned dessert as we were growing up. What if I told you you could have this delicious dessert assembled in less than 10 minutes? That you could forget about it as it cooked for several hours, as you took care of other things in your busy schedule, and came back to an amazing treat, just waiting to be served? That's how easy baked apples are when you let your crockpot do all the work for you.
If you haven't used your crockpot in awhile, then I strongly urge you to pull it out and put it to work again. This amazing kitchen appliance makes preparing satisfying meals for your family so much easier. Especially with the crazy work schedules most of us have, along with our children's after school activities. How comforting it is to come home to the wonderful smells of supper simmering away, and all you have to do is dish it up. And as I showed you in my recent Crockpot Recipes Roundup, you can cook everything from soups to dessert in your trusty crockpot!
Like these baked apples. They are ridiculously easy to prepare, and the smell of them as they are cooking is incredible. They're the perfect dessert for those of us who are gluten intolerant, with not a bit of flour in sight. They're basically a crust-less apple pie. So dust off those crockpots, and surprise your family with this old-fashioned classic dessert tonight.
Crockpot Baked Apples
4 apples (Good choices are Golden Delicious, Gala, or Jonathan)
1/2 cup brown sugar
1/4 to 1/2 cup dried cranberries or raisins
1 tablespoon + 1 teaspoon cinnamon
1/2 teaspoon allspice
4 tablespoons butter
1/2 cup apple cider or juice
Wash and core each apple. Peel off a 1 inch strip of the skin around the top of each apple to prevent the apples from splitting. Place apples in crockpot.
Fill each apple with a tablespoon or two of the dried cranberries.
In a small bowl, combine the brown sugar and spices, and stir until well combined.
Sprinkle two tablespoons of the sugar mixture over each apple, then place one tablespoon of butter in the center of each apple, on top of the sugar.
Pour apple cider into the bottom of the crockpot.
Cover and cook on LOW 4-6 hours, or HIGH 2-3 hours, or until tender.
Remove apples from crockpot and allow to cool for 5-10 minutes before serving.
*Serving suggestions: Serve as is, or drizzle with a little caramel sauce, or scoop of vanilla ice cream. Or go all out and serve them with both! Leftovers are also great chopped and served over oatmeal.
*To bake in the oven: No crockpot? No problem! Just follow the recipe as stated above, placing the apples in a 8x8 baking dish. Pour apple cider into the pan and bake at 350 degrees for 30-45 minutes, or until apples are tender.
Notes: *Cooking temperatures vary greatly from one crockpot to another, with some cooking hotter then others. Begin checking the apples for doneness at the least of the cooking times, and every half hour after, until apples are tender.
*Baked apples can be stored in the refrigerator in an air-tight container for up to 3 days.
