These hot roast beef and cheese sliders are something special. Tender slices of roast beef, BBQ sauce, and Colby/Jack cheese, are nestled in the middle of a sweet roll, covered in a special sauce, then baked until hot and melt-y, and yummy.
Are you looking for the perfect sandwich to serve at your next party? This recipe is it. They remind me a lot of Arby's roast beef sandwiches, in mini size. I wish I had a recipe for their horsey sauce, but the yummy mustard sauce that coats these sandwiches is the next best thing. We enjoyed them recently for supper with Seasoned Parmesan Potato Wedges, and they were a hit.
These are very similar to another recipe I have here on my blog, for Ham and Cheese Sliders. Only with that recipe, I use ham, and a poppy seed dressing to coat them before baking. While my family likes them, they voted the roast beef version the winner. The recipe below makes 9 sandwiches, which is perfect for my family of three. But if you want to make them for a party, feel free to double the recipe.
Roast Beef and Cheese Sliders
9 small sweet dinner rolls
3 tablespoons BBQ sauce, divided (Our favorite is Sweet Baby Ray's)
1/2 pound thin sliced deli roast beef
4 1/2 slices Colby/Jack cheese
6 Tablespoons butter, melted
2 Tablespoons Dijon mustard
1 Tablespoon dried minced onion
2 teaspoons Worcestershire sauce
Preheat oven to 350 degrees F.
Split buns and spread 1 teaspoon of BBQ sauce on one side of each bun.
Divide roast beef between the 9 bun halves, then top each with 1/2 slice of cheese.
Place top of bun on each sandwich and fit sandwiches into an 8x8 inch casserole dish.
Whisk together the melted butter, mustard, minced onion, and Worcestershire sauce in a small bowl, then spoon sauce evenly over each sandwich.
Cover baking dish with foil and bake for 15 minutes. Remove foil and continue baking 5 minutes more.
