Curried Fish Tacos #FishFridayFoodies

Fish Tacos that are easy to make, and uniquely seasoned with curry. You'll be surprised how flavorful they are. They're the perfect weeknight meal.


Many people associate fish tacos with being a Spanish dish seasoned with cumin and other spicy flavors. But surprisingly they're extra tasty when you use curry instead. Curry is an amazing spice that can pretty much stand on it's own, and doesn't need a lot of help to make a dish sing. The only other spices I used in this recipe were a touch of garlic powder, salt and pepper. But the curry is the star of the show. I even made a curry sauce to drizzle over the tacos, and love the slightly sweet creaminess it added.



The tacos are amazing with all the flavor and textures going on. They aren't spicy at all, and my husband said I could even up the amount of curry I use next time, to give it a little more kick. So these yummy and easy tacos will be a regular addition to our menu.

Curried Fish Tacos


Ingredients

3 cod fillets
1 tablespoon curry powder
1/4 teaspoon garlic powder
Salt and pepper to taste
1 tablespoon + 1 teaspoon olive oil
1 large carrot, shredded
Juice of half a small lemon
1 cup shredded lettuce
1/3 cup cilantro leaves
4 - (5 inch) corn tortillas

Directions

Rinse fish fillets and pat dry with a paper towel.
Whisk together curry powder, garlic powder, salt and pepper, and sprinkle evenly over the fish fillets.
Heat 1 tablespoon of the olive oil in a large saute pan over medium-high heat. Place seasoned fish in the pan and fry until golden brown, about 3 minutes per side, or until fish flakes easily with a fork. Set aside.
Combine shredded carrot, the teaspoon of olive oil, and lemon juice in a bowl. Season with salt and pepper to taste. Set aside.
Warm tortillas in a microwave for about 10 - 15 seconds, or until warmed through and soft.
Distribute shredded lettuce evenly among the tortillas. Cut fish into chunks and place over the lettuce. Sprinkle carrot mixture over the fish, followed by the cilantro leaves.
Serve with Creamy Curry Sauce.

Makes 5 or 6 tacos.

Creamy Curry Sauce


Ingredients

1/3 cup plain Greek yogurt
1 tablespoon honey
1/4 teaspoon curry powder
Salt to taste

Directions

Add all of the ingredients into a bowl and whisk until thoroughly combined.
