Deliciously easy No Bake Peach Yum Yum. A classic layered dessert, tweaked to make it no-bake and gluten free!

With summer having arrived early in my area, I've been preparing easy recipes, that require little to no cooking. Heavy baked desserts have been replaced with lighter, cooler fare such as fruit with whipped cream, no bake desserts, and ice cream. This dessert is perfect for #CookoutWeek! It's no-bake, made ahead of time, and is a light, cool, and refreshing ending to an outdoor cookout or BBQ,

This yummy dessert couldn't be easier to make. Fresh sweet peaches are layered with a luscious whipped cream/cream cheese mixture, over a chocolaty, nutty crust. It's then topped with whipped cream, and a sprinkling of chopped nuts. After chilling in the refrigerator for a few hours, you have a dessert your family won't be able to get enough of.

When I say this dessert is no bake, I really mean it's no bake. Most crusts require a few minutes of baking, but not so with this one. The crust is a tasty combination of ground nuts and white chocolate, that requires no baking at all. Because when summer time is here, and the temps are in the 90's and above, the last thing you want to do is turn your oven on.

A no-bake dessert that requires you to bake the crust for 10 minutes, isn't really no-bake, now is it?

Ingredients

For The Crust {An original recipe by Home Sweet Homestead}
1/3 cup white chocolate chips
2 tablespoons unsalted butter
1 cup ground pecans
2 tablespoons sugar
pinch of salt

For The Peach Filling
4 fresh peaches
2 - 3 tablespoons sugar (The amount of sugar you use, will depend on the sweetness of the peaches).

For The Whipped Cream Filling
1 - 8 ounce package cream cheese, softened
1 cup powdered sugar
2 - 8-ounce containers frozen whipped topping, thawed and divided

Additional Topping
2 tablespoons chopped pecans

Directions

For The Crust

In a microwave safe bowl, place the white chocolate chips and butter.
Microwave for 30 seconds, then in 15 second intervals, stirring after each interval, just until chocolate mixture is smooth. Do not overheat or the chocolate will seize up and be ruined.
Add nuts, sugar, and salt to the chocolate mixture, and stir really well with a fork until thoroughly combined.
Press the chocolate/nut mixture into the bottom of a 9 x 9 baking dish, pressing down firmly and evenly.
Refrigerate for 1 hour.

For The Peach Filling

Peel, pit and chop peaches and place in a bowl. Add the sugar and stir to combine.
Transfer peaches to the refrigerator until ready to use.

For The Whipped Cream Filling

In the bowl of a stand mixer, cream together softened cream cheese and sugar until smooth.
Fold in 1 container of the whipped topping just until combined.
Spread whipped cream/cream cheese mixture evenly over the crust.
Carefully spread sweetened peaches evenly over the whipped cream/cream cheese mixture.
Top with the remaining container of whipped topping, then sprinkle with the chopped pecans.
Refrigerate at least 2 hours before serving.
