No-Bake Fresh Cherry Pie #SummerDessertWeek

An easy Cherry Pie, that's No-Bake and full of Fresh Cherries. And the best part? It doesn't contain any gelatin! It's the perfect summer dessert.

This post and recipe was created for #SummerDessertWeek. I was sent samples by some of the sponsor companies, but as always opinions are 100% my own.

Fresh fruits abound in the summer, and are the perfect snack or dessert. When you're able to turn them into a delicious pie, that doesn't require any baking, it makes those fruits even better. It allows the fresh flavor of the fruit to really shine through.

This yummy pie is so easy to make, and doesn't require any baking at all, save for the pie crust. Fresh cherries are simmered for a few minutes on the stove top, then poured into the baked pie crust, along with more fresh cherries. That's it!

Then the hardest part of the recipe happens, waiting patiently for the pie to chill in the refrigerator for a few hours to set up.

While most cherry pie recipes call for tart cherries, this one uses sweet cherries, which are usually easier to find. It also allows you to use less sugar, since the cherries are almost sweet enough on their own.

And the best part? It doesn't use gelatin, like a lot of recipes out there do. This allows the fresh taste of the cherries shine through. It's perfect as is, or you can top it with a little whipped cream, for a touch of creamy goodness.


Rainier Fruit - Sweet Cherries
OXO - Cherry Pitter
OXO - Glass Pie Plate
Dixie Crystals - Sugar



2 cups fresh cherries, pitted and halved
1 pie crust (9 inches), baked
2 cups fresh cherries, pitted and mashed
1/2 cup sugar
4 tablespoons cornstarch
1 cup fresh cherries, pitted


Place the 1 cup of halved cherries in the pie shell.
Combine the 2 cups of mashed cherries, sugar and cornstarch in a saucepan.
Bring to a boil and cook for 2 minutes or until thickened, stirring constantly.
Cool mixture for 15 minutes, then pour over the cherries in the pie shell.
Arrange whole cherries on top of pie, pushing them down into the filling slightly.
Refrigerate for 2 - 3 hours.
Serve topped with whipped cream, or a drizzle of chocolate sauce if desired.

  4. Totally dig that this is no bake. The addition of cornstarch is definitely a good alternative for gelatin too!

    1. I'm not a fan of pies that use gelatin, it gives them a fake taste in my opinion. This recipe really lets the flavor of the cherries shine through.

    1. Being no-bake makes it a great summer dessert. They can be a little fickle when it comes to firming up, but it's still delicious, even if it is a little runny. :)
