It's a cool and refreshing dish during the hot summer months, and goes with just about any main dish that's served at a cookout. Hot dogs, burgers, chicken, pork chops, even steak!
Classic Coleslaw
When summer arrives it seems like we're either hosting a cookout, or attending one at a family or friends house just about every weekend. Either way, Classic Coleslaw is one of the dishes I always wind up making.It's a cool and refreshing dish during the hot summer months, and goes with just about any main dish that's served at a cookout. Hot dogs, burgers, chicken, pork chops, even steak!
It's super easy to make. I just shred up some cabbage and a little onion, throw a couple of carrots in the food processor to chop them up finely, whisk together the dressing, then just dump everything in a bowl to mix together.
The coleslaw needs to chill an hour in the fridge to allow the flavors to mingle, then it's ready to serve. Easy right? If you want to make the recipe even simpler, buy one of those bags of coleslaw mix at the store, and use in place of the cabbage and carrots.
What's my favorite part about this recipe, besides it's great taste? No cooking is involved, which makes it the perfect summer dish.

Classic Coleslaw
Ingredients
6 cups finely shredded cabbage
1 cup finely chopped carrots
1 cup mayonnaise
3 tablespoons apple cider vinegar
2 tablespoons grated onion
1 tablespoon Dijon mustard
1 1/2 teaspoons Stevia (1 tablespoon granulated sugar may be used)
1/2 teaspoon salt
Fresh ground black pepper (optional)
Directions
Place the cabbage and carrots in a large mixing bowl.
In a small bowl, whisk the mayonnaise, apple cider vinegar, grated onion, Dijon mustard, Stevia, and salt to combine.
Pour the dressing over the cabbage and carrot mixture, and toss together until well combined.
Cover and allow the coleslaw to chill in the refrigerator for at least one hour, to allow the flavors to mingle.
Serve topped with a little fresh ground black pepper if desired.
Store coleslaw covered in the refrigerator for up to 3 days.
April's tips:
The cabbage in the coleslaw will release some liquid as it sits in the refrigerator after a day or two. Just give it a couple of good stirs to mix everything together, then scoop servings out with a slotted spoon.
Don't skip the step of refrigerating the coleslaw before serving. It's an important part of the recipe, so the flavors have a chance to mingle.
