And, It can also be made in advance! Both the pavlova layers and coconut whipped cream can be made in the morning, then all you have to do is assemble the cake right before serving.

Traditional pavlova is a single layer dessert that uses whipped cream as a topping. I decided to use coconut whipped cream to make it dairy free, and layered two pavlova together to make it look more like an actual cake.
I was rewarded with a beautiful pavlova cake, that is easy enough to make for your family, but impressive looking enough to serve to guests. Serve it with additional whipped cream and fruit on the side, so everyone can add extra to their serving if they would like. It's the perfect light ending to your summer cookouts.

Summer Berries Pavlova Cake
Ingredients
Pavlova
4 large Egg Whites, at room temperature
1 cup Sugar
Pinch of salt
1/2 teaspoon vanilla
1 tablespoon corn starch
1 teaspoon white vinegar
Coconut Whipped Cream
1 - 13.5 ounce can full-fat coconut milk, refrigerated for 24 hours
2 - 3 tablespoons powdered sugar
1 teaspoon vanilla extract
Assorted Fresh Berries
Strawberries, blueberries, blackberries, and raspberries.
Directions
For The Pavlova
Preheat oven to 250 degrees F, with rack in center of oven.
Beat the egg whites until soft peaks form. Gradually add sugar and and salt and beat until stiff peaks form and sugar is completely dissolved. (about 10 minutes).
Sift the cornstarch through a fine mesh sieve over the whipped egg whites, then add the vinegar and gently fold to incorporate.
Divide meringue evenly into two piles onto a baking tray lined with parchment paper or a silicone baking mat, and smooth them with a spatula into evenly sized circles.
Bake for one hour, then turn oven off and allow pavlova to cool in the oven, with the door closed.
For The Coconut Whipped Cream
Once the pavlova is completely cooled, place a mixing bowl and beaters in the freezer for 10 minutes to chill.
Carefully remove the coconut milk from the refrigerator without shaking or tipping it, and remove the top of the can. Use a spoon to carefully scoop out the thick layer of coconut cream that has separated at the top of the can, and transfer it to the chilled mixing bowl.
Beat on medium speed until it becomes smooth. Gradually add the sugar, then the vanilla, and whip until fluffy. (2 - 4 minutes)
To Assemble the Pavlova Cake
Place the first pavlova layer on a cake stand or serving plate.
Spread half of the coconut whipped cream over the top of the pavlova, then top with the second pavlova layer. Spread the remaining coconut whipped cream over the top of the pavlova, then top with mixed berries and fresh mint if desired.

April's tips:
- Bring the eggs to room temperature before making the meringue.
- Make sure that the mixing bowl and beaters are very clean. Chilling them both makes whipping the egg whites much easier.
- Add the sugar very slowly to the egg whites while beating. About a tablespoon at a time is best.
- Brands do matter when it comes to canned coconut milk. The cheaper ones are just that, cheap, and taste nothing like a good quality coconut milk does. Plus, the cheaper brands won't give you as much solid coconut cream once chilled.
- Feel free to replace the coconut whipped cream with regular whipped cream. Of course the recipe will no longer be dairy free.
- Use your choice of fruit to top the cake. Chopped peaches, mango, pineapple, cherries, or kiwi would be equally tasty.
